INGREDIENTS: 32 Ounces 3/ ¼/4 1 1 1 1 10 ½½/2 1 1/₂ vegetable broth teaspoon iodized salt 2 teaspoon ground black pepper tablespoon paprika teaspoon ground cumin teaspoon garlic powder teaspoon chili powder Caspoon onion owder 1 tablespoon corn starch white corn tortillas Cu organic tri-color quinoa, rinsed cup dry lentils, rinsed cup thinly sliced red onion avocado, diced cup crumbled fresco cheese limes, cut into 8 wedges 04532 INSTRUCTIONS: 1. In a medium saucepan, bring the broth, spices, quinoa and lentils to a boil, reduce heat. Simmer for 20 minutes partially covered. 2. Remove lid, add the com starch. Stir for 5-8 minutes until the lentils are cooked through. 3. Heat a medium pan over high heat. Heat the tortillas for 1 minute on each side. 4. Divide the lentil mixture evenly among the tortillas. Top with red onion, avocado and fresco cheese. Serve with a wedge of lime. Simply Nature.
