Jambalaya Seasoning Mix

Full Ingredients

and/or medium uncooked, cleaned shrimp 1 lb. smoked sausage, sliced (Kielbasa works well) Brown sausage and chicken in 6-8 quart pot (if needed, use 2 tablespoons butter or olive oil to prevent chicken from sticking). Remove meet from pot and set aside. Drain off all but about 2 tablespoons of drippings, add vegetables and saute on medium heat for 15 minutes. Return sausage and chicken to pot, add broth, tomatoes, and Jambalaya Seasoning Mix. Bring to a boil. Add uncooked rice. Cover and simmer 5 minutes. Stir well. Cover and cook over low heat an additional 45 minutes. If using shrimp, stir in during the last 15 minutes of cooking Serves 6-8. The leftovers are great in the microwave.
