Definition
Sweet proteins are a relatively unstudied class of sweet compounds that could serve as innovative sweeteners. Sweet proteins mediate the translocation of sugars across cell membranes so that they taste like sugar but digest like proteins.

Health Impact
There is not enough evidence to conclude whether or not sweet proteins are safe to consume regularly. However, inflammation was observed in clinical animal trials.
