Propyl Gallate

Definition

Artificial food additive used as an antioxidant to protect fats, oils, and foods containing fats from going rancid.

Health Impact

A study done on mice by the national toxicology program has found a link between the administration of propyl gallate and the formation of tumors. Two other peer-reviewed studies have shown negative effects of propyl gallate on hormone signaling and the endocrine system.
