Health Impact
Peanut oil is associated with some health benefits since it's high in oleic acid and vitamin E. However, it is high in the pro-inflammatory omega-6 fatty acids, which when over-consumed can lead to an imbalance of omega-3 to omega-6, leading to inflammation. It's important to be aware of total omega-6 consumption, especially since these are found in other vegetable oils which are very common in processed foods today.
