Paprika extract is obtained by solvent extraction of the dried ground fruit pods of Capsicum annuum (chili pepper) and used as a coloring agent in meats, cheeses, and other processed foods.

Paprika extract is created through the process of chemical extraction, with any of the following chemicals: Acetone, Ethanol, Ethyl acetate, Hexane (a neurotoxin), Isopropanol, or Methanol. These chemical residues can remain in the final product.
