Diglycerides are naturally occurring fatty acid chains found in some seed oils like olive and cottonseed oil. They’re most commonly used in processed foods as an emulsifier, helping to keep oil and water from separating. They also help extend the shelf life and enhance the texture and consistency of products.
Although there has not been much research published on them, diglycerides have not been shown to have significant toxic effects when consumed at reasonable levels. They may contain small amounts of trans fats, which are linked to an increased risk of heart attack and stroke.
