Used as a slow-acting leavening agent in baked goods, which reacts with sodium bicarbonate (baking soda) in baking. Also used in pickling as a preservative and crisper.

Health Impact

Although typically not harmful, some studies have shown people exposed to high amounts of aluminum may develop Alzheimer's disease. People with kidney disease store more aluminum in their bodies which can lead to bone and brain disease linked to their inability to remove it from their bodies.
