This week we're excited to feature blogger Bethann Wagner! She's sharing her favorite grocery picks for a healthy week, including her beloved Farro Salad recipe.

Bethann is a lifestyle blogger based in Los Angeles, California who combines her personal experiences in family and fitness to share insights ranging from exercise to natural beauty and lifestyle products. Her passion for fitness blossomed during her tenure as a group exercise instructor at Northern Arizona University.

This week, Bethann shares her favorite clean-ingredient farro salad recipe for summer, and her top health-conscious grocery picks!

Summer Farro Salad

Ingredients:

For the farro:

For the salad:

  • 1 cup steamed frozen corn
  • 1 cup cherry tomatoes halved
  • 1/4 cup crumbled feta
  • ¼ cup pine nuts
  • 1/4 cup roughly chopped basil

Dressing:

Instructions:

  1. In a small saucepan, cook farro per instructions on package but use bone broth or chicken broth vs water for more flavor. Make sure to rinse farro, add to a pot. Bring to a boil, reduce heat, and simmer for about 25- 30 minutes until farro is chewy/cooked.
  2. While farro is cooking, steam corn and chop tomatoes/basil.
  3. Once vegetables are cooked, whisk together dressing.
  4. Allow farro to cool. In a large bowl, toss farro, corn, tomatoes + dressing together.
  5. Garnish with feta, pine nuts and basil + enjoy!
