Megan Moos' Healthier Game Day Nachos Recipe

My recipes have to be approved by a busy cowboy and young kiddos, so I like to keep things fun, simple, and real. I hope you enjoy this Game Time Nacho recipe. It will be the perfect dish to serve up during the Super Bowl!

Game Time Nachos

Ingredients:
1 1/2 lbs ground beef or ground turkey
2 5oz Siete tortilla dip chips
3 tablespoons homemade taco seasoning or 1 1/2 taco seasoning packages
2 15oz cans organic black beans, washed and drained
1/2 large white onion, diced
2 cups Organic Valley shredded cheddar cheese or Mexican blend cheese
1 organic Roma tomato, diced
1 organic jalapeño, thinly sliced (optional)
3 tablespoons Good Culture sour cream
Fresh cilantro, chopped (optional)
Additional add on’s (optional): shredded lettuce, chopped black olives, diced red onions, corn, salsa.
Directions:
Preheat the oven to 400 degrees F. Lightly grease a baking sheet or spray with avocado oil spray.
In a large skillet, add the beef (or ground turkey) and onion and cook over medium high heat until the meat has browned. Make sure to crumble the beef as it cooks thoroughly through. Drain excess fat
Add the taco seasoning and a splash of water to the meat-onion mixture. Combine until the seasoning is incorporated.
Place tortilla chips in a single layer onto the prepared baking sheet. Top with ground beef mixture, black beans, and cheese.
Place into the oven and bake until heated through and the cheese has melted. About 5-7 minutes.
Serve immediately, top with diced tomato, jalapeño, sour cream, and cilantro.
